INGREDIENTs
1. 24 egg yolks
2. 3 cups water
3. 4 cups sugar
4. garnish: shredded coconut
5. require: golden thread dispenser or an aluminium cone with a tip opening of 1/32 inch
DIRECTIONS
In a large bowl beat egg yolks with an oiler.html">electric mixer or wire whip. in a wok bring water and sugar to a boil on high heat and cook until mixture becomes syrup. fill golden thread dispenser or aluminium cone with egg yolks, while holding the opening closed. release opening over the boiling syrup and pipe egg yolks in a circular motion. as soon as the dispenser is empty, scoop up all the cooked yolks and set aside.
Refill dispenser and repeat above method until all yolks are used. chill before serving. to serve, arrange in small individual portions and garnish with shredded coconut.
